Head Chef — Indian Cuisine

About the role

<p>As Head Chef at Indo Zaika, you will author our menu, lead our kitchen, and bring the depth of regional Indian cuisine into a Japanese fine-dining vocabulary. You will work with the finest Japanese seasonal produce and have full creative ownership over the kitchen.</p>

Responsibilities

  • Design and evolve the seasonal Indo-Japanese menu
  • Lead, train, and develop the kitchen brigade
  • Maintain kitchen standards — quality, hygiene, consistency, cost
  • Build relationships with Japanese producers and suppliers
  • Partner with the GM on guest experiences, tasting events, and PR

What we're looking for

  • 10+ years of professional culinary experience, including senior kitchen leadership
  • Deep expertise in regional Indian cuisines
  • Experience working with Japanese ingredients a strong plus
  • Track record running a fine-dining or premium-casual kitchen
  • Excellent palate, kitchen leadership, and supplier judgement
